Roast veggie kebabs are a flavorful and colorful dish made with a variety of vegetables. Ingredients

  • 1 Unit Peppers, Sweet, Green, Raw
  • Basil, Fresh
  • 1 Unit Garlic, Raw
  • Oil, PAM cooking spray, original
  • Tomatoes, green, raw
  • Olive Oil
  • Salt
  • Spices, Pepper, Black

Preparation

  • Preheat your oven to 180 degrees celcius.
  • Soak your wooden kebab sticks/skewers in water for 20 minutes so that they don’t burn in the oven.
  • Chop vegetables into equal bite size pieces.
  • Finely chop basil and add crushed garlic and olive oil. Leave one side to infuse.
  • Spray your griddle pan and baking tray liberally with spray and cook.
  • Char the veggies on the hot griddle pan and thread onto skewers.
  • Place the ingredients in a roasting tray.
  • Spritz the vegetables with water or any desired liquid and season them generously with spices and seasonings.
  • Roast the dish in the oven for 30 – 45 minutes and sprinkle it with pesto while it is still hot.
  • Serve the dish on a bed of rocket.
