The Mediterranean Stack is a delicious dish made with roasted vegetables including brown flat mushrooms, brinjal/aubergine, roasted red pepper, baby marrow, red onion, garlic, and Rosa tomatoes. Seasoned with homemade basil and oil, it is served on a bed of rocket leaves. A flavorful taste of the Mediterranean in every bite.

Ingredients

  • 1 gram Onion, Red
  • 2 grams Garlic, Raw
  • Tomatoes, orange, raw
  • 1 gram Basil, Fresh
  • 1 gram Oil, palm
  • Salt
  • Spices, Pepper, Black
  • 2 Units Mushrooms, portabella, raw

Preparation

  • Preheat your oven to 180 degrees Celsius.
  • Use Spray and Cook (I prefer the olive oil) to thoroughly coat your griddle pan and heat it on high heat.
  • Griddle all your veggies except rocket until they have nice grid marks on them (only a few minutes) and then place the seasoned veggies on an oiled baking tray in the oven and bake them until they are cooked to your liking (about 20 minutes because I like my baby marrow crunchy) (I use a little Coconut or Olive Oil spray to watch the calories) and assemble. Drizzle a teaspoon of basil and olive oil on top.
